Nutrition in the Presence of High Histamine Content

Histamine is a substance created by the body itself which can cause inflammation, pain, flushed skin, allergies, swelling, insomnia, sea sickness, racing heart and decreased blood pressure.  Histamine also plays a part in migraine headaches.
In the build-up of histamine the enzyme diamine oxidase is needed. If its levels are reduced in the blood, histamine intolerance develops.
People with lowered diamine oxidase and/or the symptoms listed above should avoid foods with a high histamine content.

  • Sardines

  • Parmesan
  • Emmental
  • Harz (Mountain) cheese
  • Gouda
  • Gorgonzola

  • Salami
  • Westphalian ham, Parma ham, air dried beef (Bündner)

VEGETABLES:

  • Sauerkraut
  • Spinach
  • Tomatoes

VINEGAR:

  • Red wine vinegar

BEVERAGES:

  • Red wine
  • Champagne, sparkling wine
  • Dessert wine
